The best vegan banana chocolate chip muffins

OK first confession - I’m not a vegan. When I tried these muffins for the first time I’ll admit I was skeptical that they could be any good. This is my go to recipe anytime I have old bananas laying around. I substitute milk chocolate for dark chocolate (because it’s usually what I have in the kitchen).

2 large bananas, mashed (sometimes i’ll use 3 or 4 if I have them)

1/2 cup of oil

1 Tbsp. vanilla

1 1/2 cups of sugar

2 tsp. baking soda

4 tsp. baking powder

1/4 tsp. salt

2 3/4 cups of flour

6 oz. dark chocolate chips (I use milk chocolate sometimes)

Combine the first four ingredients. Mix in the dry ingredients until well combined. Finally add in the chocolate chips. Scoop into greased bread pan or muffin pan and bake at 375 degrees for 15-20 minutes.
